First, cut the aubergines in half lengthwise, sprinkle them with olive oil and coarse salt, then cook them for 15-20 minutes in a preheated oven. Meanwhile, dice the courgettes and pepper and chop the onion and garlic.

Then put them in a pan and add salt, pepper, parsley, basil and oregano. Brown them in very little oil for three or four minutes. After the aubergines are cooked, take them out of the oven and empty them, chop the core and mix it with the vegetables. Fill the game halves with this mixture, sprinkle with grated Parmesan cheese, then put them back in the oven.

A special tomato sauce is also prepared for this recipe. Let’s start by chopping the onion and garlic. Then, fry them in a hot pan with olive oil until they become translucent.

Add the pumpkin and carrot. Fry them for 5 minutes or until they turn brown. Sprinkle with flour and cook for another 30 seconds, then add the broth. Stir constantly and cook for 10 minutes over low heat.

After that you can add the spinach and peas, mix well and remove them from the heat. Put the dough in the pan and fill the pan with the pumpkin mixture. Cover with another layer of dough and pinch the edges.

The next step is to pierce the top of the cake with a toothpick or fork. Grease the cake with water, olive oil or vegetable butter.

Pumpkin cream is a tasty and ideal dish for the autumn season. So, for this recipe, peel the pumpkin, cut it into cubes and boil it in salted water. Add a few drops of olive oil and boil over the right heat.

Then peel the onion, celery, garlic and pepper and boil them together with the pumpkin. Let it continue to boil over low heat.

After that, try to see if the vegetables are cooked and remove them in a colander. Set the onion, garlic and pepper aside and blend the pumpkin and celery with the mixer.

  • 200 ml of cooking cream;
  • 50 g parmesan;
  • 250 g of cottage cheese;
  • a few sage leaves;
  • 12 sheets of lasagna.

We need to heat the oven to 200 degrees, then put the pumpkin slices greased with a drizzle of oil in a pan and cook for about 30 minutes, until they soften and become slightly brown. At the same time, mix the liquid cream with half the Parmesan.

Then, when the pumpkin is ready, let it cool down a bit, then remove the skin. In a separate bowl, mix the ricotta with the sage and the remaining Parmesan cheese and add the mixture over the pumpkin, seasoning to taste (try not to crush the pieces of pumpkin too much).
