Greek-style spinach soup

- 1 kg of spinach
- 2.5 l of vegetable soup or water
- 4 tablespoons of oil
- 1 medium onion, finely chopped
- 1 medium carrot, grated
- 1 slice of grated celery
- 2 green onions
- 30-40 g of rice
- 2 small cloves of garlic
- the juice of 1 lemon
- 200 ml of cooking cream
- 3 egg yolks
Method of preparation
Put the vegetable soup or water on the stove so that it is lukewarm when you add the other ingredients. Boil the rice in a smaller pot. Wash the spinach, peel and blanch in boiling water.
Drain and cut into small pieces. Fry the onion in a pan. Add the carrot, celery, chopped green onion and put all these ingredients in the hot soup. Boil for five minutes and add the spinach.
Add the squeezed garlic, lemon juice, salt, pepper and cook for another five minutes. Separately, in a bowl, mix the cooking cream with the egg yolks. Add a few ladles of soup and then add the mixture from the bowl to the saucepan.
