Surely you have also heard the famous expression “cabbage with meat”. Well, no matter how funny the cacophony that many Romanians use in a pejorative tone may seem, this culinary preparation is extremely tasty, filling and preferred by Romanians.
A valuable tip to keep in mind is that sauerkraut is very difficult to cook if it isn’t soggy. This must be boiled or fried for a certain period of time.
However, there is a simple and effective trick that you can apply without any problems. All you have to do, according to the housewives, is to cut the cabbage into very thin strips, then rub the cabbage with coarse salt.
Also, after completing the first stage, the cabbage should be left to rest for 20 minutes. During this time the coarse salt will act on the cabbage strips, which will become much softer. In the end, don’t forget to rinse it very well with cold water, after which you can cook it very easily, without problems.
Braised cabbage with dill recipe
For this extremely delicious recipe, the following ingredients are needed:
- 3 tablespoons of oil,
- 2 carrots,
- salt, pepper, chilli,
- 1 tablespoon of tomato paste,
- 2 bunches of dill,
- 200 ml of poultry broth,
- 200 g of yogurt,
- 200 g of boneless chicken breast,
- 2 sausages,
- 100 g of veal marrow.
First you will cut the cabbage and rub it lightly with salt. As the cabbage soaks, you will dice the meat and sausage and grate the carrots.
Next, the cabbage is roasted in a pan, and you will add the carrot and spices: paprika, salt and pepper. After acquiring a coppery color, the cabbage is extinguished with the chicken broth.
At the end you will add the meat, the sausages, the marrow and the tomato paste, after which you will let all the mixture boil for half an hour. Remove the cabbage and place it on a plate, on which you can sprinkle with chopped dill and yogurt.
Cabbage meat recipe
For this simple recipe you need:
- a little cabbage,
- 1 bell pepper,
- 4 large tomatoes,
- 1 red onion,
- pepper, salt,
- 50 ml of oil,
- 4 large pieces of smoked sausage,
- 2 tablespoons of broth,
- parsley and dill.
To begin, you will put the soaked cabbage on the meat and let it simmer for about 15 minutes, until its volume decreases.
During all this time, you need to add the spices and stir constantly, so that they do not stick. After the cabbage is sufficiently reduced, you can add the broth and a few bay leaves. Leave everything on the stove for another 15 minutes.
At the end you will put the pot in the oven, for about an hour and a quarter, at a temperature of 180 degrees Celsius. Braised cabbage can be served with polenta and a glass of strong beer.
